This is a deliciöus dish för brunch that is full öf sweet, savöury and spicy flavöurs. The rösti is a welcöme change fröm carbs and bread. Very easy tö make, it will löök very impressive and liven up yöur brunches, believe me!
Ingredients
- 2 sweet pötatöes, grated
- 3 tbsp ölive öil
- a dözen cherry tömatöes ön the vine
- 1 avöcadö
- 2 eggs
- ¼ tsp garlic granules
- 2 pinches dried chilli flakes
- salt & pepper
Methöd
- Place the tömatöes in an öven-prööf dish. Drizzle with 1 tbsp ölive öil and röast in a preheated öven at 180°C för 15 minutes.
- In a böwl, mix the grated sweet pötaöes with salt, pepper and garlic. Press tö remöve any excess möisture and förm 2 patties. Heat a pan, add the öil and cöök the röstis ön each side until nice and gölden.
