Mini Chocolate Chip Muffin

Ingredients 

  • 1/2 cup sugar
  • 4 tablespoons butter
  • 1 large egg
  • 1/2 cup 
  • 2% milk
  • 1/2 teaspoon vanilla extract1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2/3 cup miniature semisweet chocolate chips

 Directions

  1. Preheat oven to 375F.
  2. Line a mini-muffin-tin with paper liners or grease with cooking spray. Set aside.
  3. In a large bowl, cream sugar and butter until light and fluffy.
  4. Beat in egg, first, then beat in milk and vanilla.
  5. In a mixing bowl whisk together the flour, baking soda, baking powder and salt; add to creamed mixture just until combined.
  6. Fold in chocolate chips.
  7. Spoon about 1 tablespoon of batter into each mini-muffin cup.
  8. Bake for 10 to 12 minutes, or until a toothpick inserted in the center comes out clean.
  9. Cool in pans for 5 minutes; remove from muffin tin and transfer to wire racks. 
  10. Serve warm or cold.
