In New Orleans, it’s a fact that we enjoy good food, and we like our food well seasoned. I thought of these truck fries from Austin, and imagined how we’d make them here in NOLA; they would certainly include some zesty flavor.Perfectly cut, delicious French fries. Mmm.. I can taste them now. Unfortunately, those fries aren’t so great for you, so I decided to create my own healthier version in my oven. A version, my picky eaters would love. What’s not to love about french fries?

NEW ORLEANS TRUCK FRIES

INGREDIENTS

  • 4 russet potatoes, washed and cut into even strips (peeling is optional)
  • 1/4 cup finely chopped parsley
  • 1/3 cup freshly grated parmesan cheese
  • 2 Tablespoons oil
  • 2 teaspoons creole seasoning (I used Zatarain’s Big & Zesty)

INSTRUCTIONS

  1. Preheat the oven to 400 degrees.
  2. Wash, peel and cut the potatoes into strips. Soak in water and dry well.
  3. On a parchment paper lined baking sheet, toss the potatoes, creole seasoning and oil. Using your hands, toss well until everything is evenly coated.
  4. Bake for 20 minutes, checking after 10 minutes to flip for even browning.
