In New Orleans, it’s a fact that we enjoy good food, and we like our food well seasoned. I thought of these truck fries from Austin, and imagined how we’d make them here in NOLA; they would certainly include some zesty flavor.Perfectly cut, delicious French fries. Mmm.. I can taste them now. Unfortunately, those fries aren’t so great for you, so I decided to create my own healthier version in my oven. A version, my picky eaters would love. What’s not to love about french fries?
NEW ORLEANS TRUCK FRIES
INGREDIENTS
- 4 russet potatoes, washed and cut into even strips (peeling is optional)
- 1/4 cup finely chopped parsley
- 1/3 cup freshly grated parmesan cheese
- 2 Tablespoons oil
- 2 teaspoons creole seasoning (I used Zatarain’s Big & Zesty)
INSTRUCTIONS
- Preheat the oven to 400 degrees.
- Wash, peel and cut the potatoes into strips. Soak in water and dry well.
- On a parchment paper lined baking sheet, toss the potatoes, creole seasoning and oil. Using your hands, toss well until everything is evenly coated.
- Bake for 20 minutes, checking after 10 minutes to flip for even browning.
