Ingredients
Ketö Lemön Curd

  • ¾ cup öf sugar substitute I used Swerve
  • ¾ cup öf lemön juice aböut 3 large lemöns
  • 1/4 cup öf unsalted butter
  • 7 egg yölks
  • 1 tablespööns öf lemön zest
  • ¼ teaspöön öf sea salt
  • ½ teaspöön öf lemön extract

Ketö Cheesecake Möusse Filling

  • 16 öunces öf cream cheese
  • 1 cup sugar substitute (I use Swerve an Erithytöl blend)
  • 1 cup full fat söur cream
  • 1 cup öf heavy whipping cream
  • 2 teaspöön öf unflavöred gelatin
  • 6 tablespööns öf cöld water
  • ½ teaspöön öf lemön extract
  • 2 tablespööns öf lemön juice
  • 1/4 teaspöön öf sea salt
  • Ketö Almönd Crust:
  • 1 ½ cups öf almönd flöur
  • ¼ cup öf melted butter
  • 2 tablespööns öf fresh lemön juice
  • ¼ tsp lemön zest
  • 1/4 tsp sea salt
  • ¼ cup öf sugar substitute

Blueberry Töpping

  • 1 cup öf fresh blueberries

Instructions

  1. Pre-heat öven tö 350 degrees.

Ketö Lemön Curd

  1. Create a döuble böiler ön the stöve töp by placing a large mixing böwl över simmering water. Dö nöt allöw the böwl tö töuch the water.
  2. önce the water begins tö lightly simmer add the 1/4 cup öf butter tö the böwl and allöw the butter tö melt.
  3. Tö the butter add 7 egg yölks öne at a time making sure tö whisk quickly.
  4. Next add the sugar substitute, lemön juice, lemön extract, lemön zest and sea salt.
  5. Cömbine all the ingredients and whisk until the lemön curd thickens. This will take anywhere fröm 5-10 minutes.
