The meat is already extremely flavorful so I tend to leave it alone. If you’d like, you could totally season the meat with taco or fajita seasoning!
Shredded Beef Taquitos
Ingredients
- 3 cups shredded beef see link below
- 1 cup shredded cheese
- 12 small corn tortillas
- Seasoning for the meat optional
- 2 tbsp oil
Instructions
- Season meat if desired.
- Heat the tortillas up in the microwave sandwiched between two damp paper towels. While the tortillas are very warm and moist roll 1/4 cup of shredded meat and a generous tablespoon of shredded cheese up into the tortilla.
- Repeat with the remaining tortillas.
- Heat the oil in a large frying pan over medium heat. Fry the taquitos seam side down first for 30 seconds to 1 minute or until crisp. Roll and repeat on all sides. I usually fry them in a few batches.
- Cool slightly and then serve with sour cream, salsa or anything else you can dream up!
